Can a servo be made to rotate continuously at 2 RPM, like a motor with gears does? Will the motion be jerking?

2 RPM is pretty slow for a servo, you might prefer to use the right DC gearmotor instead if you need consistent, smooth motion.

FYI for faster speeds, you could use a continuous rotation (CR) servo. Full speed control in both directions. Some have better low-speed control than others. You can buy CR servos or modify standard servos.

Many hobby servos can be modified for continuous rotation by removing the stop and replacing the feedback potentiometer with fixed resistors. You can also buy such servos. However, speed will be considerably faster than 2 rpm,even if you feed it with a low voltage and/or feed it with a Servo command close to neutral. Hence, you will need gearing.
Perhaps a stepper motor would be appropriate, but would exhibit some jerkiness.
